Labneh is thick creamy yoghurt cheese, made with Hung / Strained yoghurt mixed with little salt.. Its a great alternative to Cream cheese, Mayonnaise etc.
In the Middle East, this is topped with Extra Virgin Olive oil and Za'atar and served as a dip and as a spread.
Leftover Labneh keeps good for about 2 weeks in fridge or you can even make Labneh balls and soak it in olive oil for 2-3 months in fridge. You can then have it like that with pita bread, toasted bread, sandwich as a spread or as an appetizer or roll it in Sumac, Za'atar, sesame seeds etc along with Salad.
It's a great source of protein, probiotics, minerals and Vitamins.

- 400 gms Approx. Strained/ Hung Curd from 1 kg Whole milk curd
- 1/2 Tsp Salt
- 2-3 tbsps or as needed Olive oil
- as needed Zattar
- as needed Chilli flakes (optional)
Steps to make to make Labneh (Yoghurt Cheese Dip / Spread)
- In a bowl mix yoghurt/ curd with Salt.
First method: Line a strainer with a cheese cloth over a bowl and pour the yoghurt in it, cover it with the overhang of the cheesecloth and let it strain on the kitchen countertop or in the fridge for 24-48 hours.
Second method: bring the edges of the cheese cloth together and tie it and hang it on the kitchen sink faucet for 24-48 hours. But since I prefer the first method as this second method keeps my faucet engaged

- The strained curd should be like soft cream cheese. Once ready put in a bowl, spread it and make a shallow well like in the centre and in & around and top it with Extra Virgin Olive oil, Za'atar and Chilli flakes serve it....you can add chopped parsley and mint too but that reduces the shelf life of the za'atar. Serve it as a dip or spread. It's Yummy !
